Imagine, out of a dazzling ray of bright sunshine you see a flash of colour coming your way.

A curvy shaped eggplant. Ha! You catch the sleek aubergine and tuck it in your arms. You have caught a special vegetable. This superfood is bright and shiny and you will be too when you eat it.
Inside the rich purple skin of the eggplant is a nifty ingredient called an Anthocyanin. This is what makes the vegetable bright purple.
Your eyes are attracted to the bright colour and your tastebuds will light up to try all the different ways eggplant can be part of your next performance meal.
Eggplant could be categorized as a superfood flavour blast as there are only trace amounts of nutrients. One of the flavour superpowers of eggplant is sponginess! Yup, this food has such a unique texture. When you play with texture and flavour and colour you will have more fun with what you eat.
1 cup of cubed eggplant gives you a tiny bit of everything such as magnesium, folate and vitamin K.
Try making eggplant parmesan, roasted eggplant, or add eggplant to a stir fry!
