Session 4: THE POWER OF ZING

Discover the power of zing and create a powerful recipe in your kitchen. Have all the ingredients ready and measured out. Pre-cook and chop the squash.

  • 1 butternut squash (can be replaced by 3 medium sweet potatoes)
  •  6 tbsp olive oil
  • 1 1/2 cups onion, diced
  • 3 zucchini, diced
  • 1 tbsp curry powder
  • 3 cups canned chickpeas, rinsed and drained
  • 4 cups chicken broth
  • 2 cups plain Greek Yogourt
  • 2 tbsp extra virgin olive oil
  • 6 slices whole grain bread (optional)
