Discover the power of zing and create a powerful recipe in your kitchen. Have all the ingredients ready and measured out. Pre-cook and chop the squash.
- 1 butternut squash (can be replaced by 3 medium sweet potatoes)
- 6 tbsp olive oil
- 1 1/2 cups onion, diced
- 3 zucchini, diced
- 1 tbsp curry powder
- 3 cups canned chickpeas, rinsed and drained
- 4 cups chicken broth
- 2 cups plain Greek Yogourt
- 2 tbsp extra virgin olive oil
- 6 slices whole grain bread (optional)
